Garlic Chicken with
Mango Watermelon Salsa,
Fresh Greens & Honey
Lime Dressing

Ingredients
  • 1 large mango, cubed
  • 5 slices watermelon cut into cubes
  • 1 avocado, cubed
  • 3 green onions, thinly sliced
  • Juice of 2 Limes, divided
  • Salt & Pepper
  • ¼ cup Olive Oil
  • 2 Drizzles of Olive Oil
  • ¼ tsp chili flakes (optional)
  • 10 cherry tomatoes (optional)
  • Hand full of fresh Cilantro, roughly chopped
  • Small hand full fresh Basil, roughly chopped
  • 2 cloves Garlic, finely chopped
  • Enough fresh greens for 4 salads
  • 1 tbsp Honey or Maple Syrup
  • Sprinkle of Garlic Granules
  • 1 lb chicken breasts

Step by Step Instructions

Step 1

Preheat oven to 350°. Pour a healthy drizzle of olive oil into a bowl and toss chicken breasts in oil. Add a sprinkle of salt, pepper, and garlic granules and toss until chicken is evenly coated.

Place chicken breasts on a parchment lined baking sheet and pop them into the oven for about 45 minutes, or until cooked through.

Step 2

While chicken is in the oven, prepare your salsa.

Put mango, watermelon, avocado, green onions, cherry tomatoes (if using them), basil, cilantro, and chopped garlic into a medium sized bowl. Add ¼ cup olive oil, the juice of 1 lime, chili flakes, salt and pepper to taste, and toss until well combined then set aside and prepare your salad dressing.

Step 3

To prepare the dressing for your greens place the juice of the other lime into a small bowl. Add a drizzle of olive oil and the honey. Mix well and set aside.

Step 4

When chicken is done, remove from oven, cover with a pot lid or foil tent and let it rest for two or three minutes. While chicken is resting, place greens into a large bowl, pour dressing over and toss well. Distribute greens evenly over four plates. Serve a generous scoop of salsa into the center of each salad. Slice chicken breasts into thin slices and place a row of chicken slices (shared equally between the four plates) over the salsa and then drop a spoonful of salsa on top of the chicken to finish each dish.
