Lamb Burgers with Pesto Roasted Baby Potatoes

Ingredients
  • 1 lb ground Lamb (Don’t like lamb? Use beef or pork instead!)
  • 1 Onion, sliced in rounds
  • 6 Mushrooms, sliced
  • 2 Roma Tomatoes, sliced
  • 4 pieces Romaine Lettuce (any type of leafy green is just fine!)
  • 16 – 24 Baby Potatoes cut into quarters (or 5 large potatoes cut into cubes)
  • 6 – 8 Tbsp Basil Pesto
  • 2 cloves fresh Garlic, finely minced
  • Salt & Pepper
  • Butter to sauté
  • 1 egg (optional)
  • ½ cup fresh grated Parmesan or Asiago cheese
  • 4 Burger Buns
  • Burger condiments of your choice

Step by Step Instructions

Step 1

Set oven to 350° to preheat while you prepare the potatoes. Slice potatoes into quarters and put them in a bowl. Add ½ tsp salt, 10 good cracks of fresh pepper, and 4 to 6 tbsp basil pesto, and mix well to combine and coat the potatoes. Place potatoes on a parchment lined baking sheet and pop them into the oven until golden brown – 30 to 45 min, depending on the thickness of the slices.

Step 2

While the potatoes roast, prepare everything else. Slice onion into round slices and sauté in butter over medium high heat until golden brown. Set aside. Slice mushrooms, sauté as above, and set aside. While onions and mushrooms are cooking, season and prepare the lamb patties (or beef/pork). Place ground meat into a bowl. Add ½ tsp salt and about 20 cracks of fresh pepper, crushed garlic, egg (optional), and two tbsp basil pesto to the bowl. Use your hands to mix the seasoning into the ground meat and then form into four patties. Go for flatter rather than fatter patties as they will cook more evenly and won’t dry out.  Cook the meat patties in a heavy pan over medium heat, turning over once until cooked through and nicely browned on both sides. Cooking time will vary depending on how thick you make your patties, but if they’re on the flatter side, about 5 min per side should do nicely.  Try to time things so that the patties and potatoes are ready at the same time.

Step 3

Once the potatoes and meat patties are done turn off the oven and pop the burger buns in beside the pan of potatoes to warm for a few minutes. Once they are toasty, cut them open and add your favorite condiments (mayo, mustard, and a touch of ketchup are nice). Add your greens to the bun, then your lamb pattie, onions, mushrooms, and tomatoes. Sprinkle with fresh parmesan and finish with the top of the bun. Distribute Pesto Roasted Baby Potatoes over each plate, and sprinkle generously with the remainder of the grated cheese. There you go – you just made gourmet burgers and the most delicious roasted potatoes you will ever taste! Enjoy!
