Baked Egg Noodles in Tomato Meat Sauce

  • 350g egg noodles (about ¾ lb dry noodles)
  • ½ lb mozzarella, grated
  • ½ lb ground beef
  • ½ lb ground pork
  • ½ onion, cubed
  • ½ lb mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ tsp nutmeg
  • ¼ tsp cinnamon
  • 2 c (500ml) marinara sauce
  • ½ tsp salt
  • 20 cracks fresh black pepper
  • 2 tbsp butter

Step by Step Instructions

Step 1

Put the pasta water on to boil and cook egg noodles until they are about half cooked as per package instructions. While the pasta is cooking, start the sauce.

Place 2 tbsp in a heavy skillet over medium heat. Add the mushrooms and sauté until they begin to brown, then turn the heat up to medium high and add the onions and garlic. Sauté until the onions begin to turn translucent, then add the meat and sauté until it is nicely browned.

Step 3

Once the meat is browned you will likely need to drain off the excess fat. Tip the pan slightly and push the meat up the pan and allow the fat to run to the lower side of the pan. Use a large spoon to scoop the excess fat into a cup, let it cool, then discard the fat into your compost. Once you have drained the fat add the marinara sauce, salt, pepper, nutmeg, and cinnamon to the pan, and let the sauce simmer about 10 minutes. Set the oven to 375.

Step 4

When the pasta is half cooked drain it well and return it to the pot. When the sauce is finished simmering, pour it over the egg noodles and stir until everything is well combined then scoop the contents of the pot into a greased 9 x 13 baking dish. Sprinkle the mozzarella evenly over the pasta and pop the pan into the oven for 40 minutes or until the cheese is golden brown. Let the dish rest for a few minutes, then serve and enjoy!
