Baked Ham with Roasted Yams & Onions on Fresh Greens

Ingredients
  • 1 large ham steak (about 1 lb – large enough for 4 servings)
  • 2 large yams, cubed
  • 1 large onion, cut into thick slices
  • 4 c salad greens
  • Drizzle of olive oil
  • Salt & Pepper
  • 2 tbsp maple syrup – divided
  • 1/8 c balsamic vinegar
  • 1/8 c olive oil

Step by Step Instructions

Step 1

Set oven to 375°.

Place cubed yams and sliced onions into a large bowl. Drizzle with olive oil and season with salt and pepper to taste. Toss until evenly coated then pour the yams and onions onto a parchment lined baking sheet and pop them into the oven for 35 – 45 minutes, until golden brown on the edges (time will vary depending on how large you chop your yams).

Step 2

Place ham steak on a parchment lined baking sheet and use a pastry brush to coat it with 1 tbsp of maple syrup then sprinkle with fresh cracked pepper and set aside.

Share the salad greens over four plates (in the center of each plate) and set aside.

Place 1 tbsp maple syrup, balsamic vinegar, and olive oil into a small jar with a tight fitting lid. Set aside. You will use this to dress your salads.

Step 3

When there the yams and onions are about 10 minutes from done pop the ham steak into the oven beside them.

When the yams and onions are done serve them onto the bed of greens on each plate. Slice the ham into 8 pieces and place two slices on each serving of yams and onions. (We’re going to stack things up tonight!). Give the salad dressing a good shake then drizzle dressing over-top of the ham, yams, and greens on each plate. Serve and enjoy this savory sweet and salty dinner!
