Chili Lime & Beef Rice Bowls
- 1 c Greek Yogurt
- Juice of 1 lime
- 1 – 2 tsp chili flakes (depending on how spicy you like your food)
- 1 tbsp garlic granules
- 3 tbsp soy sauce
- 1 – 2 tbsp maple syrup (or honey)
- 1 c dry short grain brown rice (cooked as per package instructions)
- 1 avocado (sliced)
- 1 red pepper (cut into long slices)
- ½ c sugar or snap peas (whole)
- 4 green onions (chopped)
- 1 medium onion (cubed and sautéed )
- ¼ c cilantro (chopped)
- Lettuce greens
- 1 lb beef steak
- 1 tbsp Butter
- Garlic granules, Salt, and Pepper to rub steak

Step by Step Instructions
Step 1 – Rice
Cook rice according to package instructions (note that brown rice takes about 45 minutes to cook).

Step 2
While rice is cooking sauté the onion until it begins to brown and prepare all vegetables as noted above. Set aside.
Step 3
Whisk together yogurt, lime juice, chili flakes, garlic, soy sauce and maple syrup in a small bowl. Correct seasoning to your taste and set aside.

Step 4
Rub the steak with salt, pepper, and garlic granules and set aside until rice is about 15 minutes from being done, then melt butter in a heavy pan (a cast iron pan is perfect here) and cook steaks over medium high heat until done to your preference (I prepare mine Medium Rare, which takes about 10 min). Remove pan from heat and set aside while you prepare your bowls.
You can arrange the bowls any way you like. I like to build mine on a base of rice. Share the rice between 4 bowls. Arrange an assortment of sliced vegetables and greens over the rice. Slice the beef and distribute if over the vegetables then pour yogurt dressing over each bowl and sprinkle with green onions and cilantro. Serve, and Enjoy!!
