Chicken Lettuce Wraps with Spicy Peanut Sauce & Roasted Potato Wedges
- 8 boneless, skinless chicken thighs, cubed
- 1 head Bibb lettuce or 2 Romaine hearts
(whole leaves) - 1/3 English Cucumber, cubed
- 3 sprigs green onion, chopped
- 1 c cherry tomatoes, quartered
- 1 carrot, grated or spiralized
- ¼ red cabbage, thinly sliced
- ¼ onion, finely chopped
- Handful of cilantro, roughly chopped
- 8 medium potatoes, cut into thin wedges
- 2 Drizzles olive oil
- 2 Sprinkles salt, pepper, and garlic granulesPeanut Sauce
- ¼ c peanut butter
- Juice from 1 lime
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp apple cider vinegar
- 3 tbsp honey or maple syrup
- 1” piece fresh ginger, minced
- 3 cloves garlic, minced
- 1 tsp chili flakes

Step by Step Instructions
Step 1
Heat oven to 350°.
Place potato wedges into a bowl, drizzle with olive oil and sprinkle with salt, pepper, and garlic granules and toss until potatoes are evenly coated. Pour wedges onto a parchment lined baking sheet in a single layer and pop them into the oven for 40 to 45 min, until tender and golden brown.
Step 2
Place cubed chicken into the same bowl, drizzle with olive oil and sprinkle with salt, pepper, and garlic granules and toss until chicken is evenly coated. You can either pan fry the chicken, or pour it onto a separate parchment lined baking sheet and pop them into the oven alongside the potatoes (Roast for 15 to 20 min. Pan fry for about 10 min).

Step 3
While potatoes and chicken are cooking, get your sauce ready. Place all sauce ingredients into a small food processor and buzz until sauce is consistent in texture (if it’s too thick add a little water). Taste and adjust flavors to your preference, then set aside.
Prepare your veggies as noted above and put all veggies, except the lettuce, into a bowl and toss to mix. Set aside until potatoes and chicken are ready.
Step 4
Set out 4 dinner plates and place a couple of whole Bibb lettuce leafs on each plate. Add a scoop of the mixed veggies to the center of each leaf – don’t over fill them as you’ll be wrapping the sides of the lettuce around the veggies (like a taco shell). Drizzle a bit of peanut sauce over the veggies.
Step 5
Remove the potatoes and chicken from the oven when they’re done and share potato wedges over each plate. Top each lettuce wrap with chicken and drizzle with more peanut sauce (a lot more!). Serve with extra napkins. These wraps are delicious, and messy!!
