Fennel Thyme Pork Roast

Ingredients
  • 3 lb Pork Butt Roast

  • Drizzle olive oil

  • 1 tsp garlic granules

  • 1 tsp fennel powder

  • 1 tsp thyme

  • ½ tsp basil

  • ½ tsp salt

  • 10 cracks of fresh black pepper

  • 6 carrots, cut into sticks

  • 4 medium potatoes, cut into wedges

  • 1 large onion, sliced

Step by Step Instructions

Step 1

Heat oven to 350°.

Prepare the veggies as noted above and pop them into a bowl. Drizzle with olive oil and sprinkle with salt, pepper, and garlic granules. Toss well until everything is evenly coated, and set aside.

Step 2

Place the pork roast into a bowl. Drizzle with olive oil and sprinkle with salt, pepper, garlic granules, fennel powder, thyme, and basil. Use your hands to roll and massage the roast through the olive oil and spices until it is evenly coated.

Step 3

Place the roast into a small roasting pan and scatter the vegetables around the roast. Pop the pan into the oven for about 1 ½ hrs, until the pork roast reaches and internal temperature of at least 145°.

When the roast is done remove it from the oven, cover, and let it rest for 5 to 10 minutes. Once the roast has rested, slice and serve up your fabulous savory dinner!
