Five Spice Chicken Rice Bowls

Ingredients
  • 6 boneless, skinless chicken thighs
    (or two breasts), cubed

  • 1 tsp coconut oil

  • ½ onion, cubed

  • 2 cloves garlic, minced

  • Salt & Pepper to taste

  • 3 green onions, sliced, whites stems separated from green tops)

  • Small crown of broccoli, cut into florets

  • 2 tsp Five Spice Powder

  • ¼ c cranberries

  • 1 c short grain brown rice (In a hurry? Use any kind of white rice.)

  • Soy Sauce & butter to finish the rice

Step by Step Instructions

Step 1

If you are using brown rice, put it on and cook to package instructions. It will take about 45 minutes to cook. If you pressed for time, use any kind of white rice instead.

If you opt for brown rice, let it cook about 15 minutes before you start the chicken and broccoli. If you go with white rice, start everything at the same time. Whichever you choose, get that rice going!

Step 2

To prepare chicken and broccoli, melt coconut oil in a heavy skillet over medium heat. Add cubed onions and the sliced white stems of the green onions along with the garlic and sauté until garlic is fragrant (a couple of minutes) then add chicken, cranberries, salt, pepper, and five spice powder. Sauté until chicken is almost cooked through, then add broccoli and continue sautéing until broccoli is bright green and tender crisp. Remove from heat and cover to keep warm until rice is done.

Step 3

When rice is done, fluff it with a fork, add butter and soy sauce to your taste, and mix well, then serve rice to four shallow bowls.

Top the rice with chicken and broccoli then sit down and enjoy the delicious flavors of this savory comfort dish!
