Garlic Roasted Chicken & Root Vegetables

  • 1 ½ lb boneless, skinless, chicken thighs, cubed
  • 2 lg red beets, cubed
  • 2 lg golden beets, cubed
  • 2 carrots, in medium round slices
  • 1 onion, cubed
  • ½ medium cabbage, cubed
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 20 cracks fresh black pepper
  • Large drizzle of olive oil

      Step 1

      Heat oven to 350° and line a baking sheet with parchment paper.

      Place all ingredients into a large bowl and drizzle with olive oil. Mix until everything is well coated in spices and olive oil, then spread all ingredients evenly over the parchment lined baking sheet.

      Step 3 

      Place in the oven and roast for 35 – 45 minutes, until beets and carrots are cooked through. Serve and enjoy this quick and easy one-pan-wonder!
