Garlic Roasted Chicken & Root Vegetables
- 1 ½ lb boneless, skinless, chicken thighs, cubed
- 2 lg red beets, cubed
- 2 lg golden beets, cubed
- 2 carrots, in medium round slices
- 1 onion, cubed
- ½ medium cabbage, cubed
- 3 cloves garlic, minced
- 1 tsp salt
- 20 cracks fresh black pepper
- Large drizzle of olive oil
Step by Step Instructions
Heat oven to 350° and line a baking sheet with parchment paper.
Place all ingredients into a large bowl and drizzle with olive oil. Mix until everything is well coated in spices and olive oil, then spread all ingredients evenly over the parchment lined baking sheet.
Place in the oven and roast for 35 – 45 minutes, until beets and carrots are cooked through. Serve and enjoy this quick and easy one-pan-wonder!
