Baked Ham Steak with Roasted Potatoes
and Sweet & Sour Cabbage
1 large or 2 small ham steaks (about 1 lb)
1 onion, sliced
1 small cabbage (any kind), chopped
½ c cherry tomatoes, halved
6 medium potatoes, in small cubes
¼ c maple syrup
Splash of apple cider vinegar
Sprinkle of salt, pepper, and garlic granules
½ tsp salt
10 cracks fresh black pepper
Drizzle of olive oil
Butter for sauté
Step by Step Instructions
Place potatoes into a bowl, drizzle with olive oil and sprinkle with salt, pepper, and garlic granules. Toss until potatoes are well coated and pour the potatoes onto a parchment lined baking sheet. Pop them into the oven for about 45 minutes, until golden brown and tender to a fork.
Place ham steak(s) on a parchment lined baking sheet. Brush with a little maple syrup and sprinkle with salt, pepper, and garlic granules. Set aside until the potatoes have been in the oven for half an hour, then pop the ham into the oven alongside the potatoes.
Once the ham is in the oven melt a little butter in a heavy skillet over medium high heat. Add the onions and sauté until they begin to caramelize, then add the cabbage. Sauté for about 5 minutes, then add the maple syrup, apple cider vinegar, ½ tsp salt and 10 cracks pepper. Sauté a few minutes more then mix in the cherry tomatoes, taste and correct flavor as required. Cover the pan and turn off the heat until potatoes and ham are done.
When potatoes are done remove them from the oven along with the ham. Cut the ham steaks into individual servings and share them over 4 plates. Add potatoes to each plate along with a healthy serving of sweet and sour cabbage. Now sit down and enjoy all the sweet, sour, and savory flavors going on in this meal.
