Perogies with Shiitake Mushrooms & Bacon

Ingredients
  • 20 perogies (just over a pound) any kind you like!
  • 10 slices thick cut bacon
  • 1 lg onion, cut into slices
  • 1 lb shiitake mushrooms (any mushroom you like will be fine) sliced
  • 1 bunch collard greens (kale or Swiss chard are great options too) stems removed, sliced into ribbons
  • 1 small tub sour cream
  • Butter for sauté
  • Salt and Pepper
  • Garlic granules
  • Chili flakes (as much or as little as you like)

 

Step by Step Instructions

Step 1

Melt a little butter in a large skillet and caramelize onions. While the onions are cooking, slice bacon into little bits and crispify over medium heat in another large skillet.

When onions are done remove from the pan and set aside in a warm oven. Add more butter to the pan and sauté the mushrooms with salt, pepper, and a sprinkle of garlic granules.

When bacon and mushrooms are done remove from pan and set aside in the warmed oven with the onions.

When bacon and mushrooms are done remove from pan and set aside in the warmed oven with the onions.

Prepare perogies as per package instructions or you can boil or fry them as you like! (I like to fry mine from frozen over medium low heat in a good amount of butter until they are golden brown).

When perogies are nearing done add a little more butter to the pan that you cooked the onions and mushrooms in and sauté the collard greens with a little salt, pepper, and chili flakes until greens begin to soften and wilt.

Step 4

When perogies and greens are done share them over 4 plates. Top the perogies with sour cream, mushrooms, bacon, and onions – time to enjoy dinner!
