Pork Kabobs with Roasted Yams
- 1 lb pork tenderloin, cut into bite sized cubes
- ½ red pepper, cut into bite sized cubes
- ½ yellow pepper, cut into bite sized cubes
- 1 small zucchini, cut into bite sized cubes
- 1 onion, cut into bite sized cubes
- 2 pears, cut into bite sized cubes
- 10 small mushrooms (whole)
- 2 large yams, cubed
- 2 Drizzles olive oil
- Salt & Pepper
- ½ tsp Garlic Granules
- 8 bamboo skewers (9.75”)
Peanut Sauce
- ¼ c peanut butter
- Juice from 1 lime
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp apple cider vinegar
- ¼ c honey or maple syrup
- 1” piece fresh ginger
- 3 cloves garlic
- 1 tsp chili flakes

Step by Step Instructions
Step 1
Set oven to 375°.
Place yams into a large bowl, drizzle with olive oil, sprinkle with salt and pepper then pour onto a parchment lined baking sheet and pop them into the oven for about 45 minutes, or until tender.
Place pork, peppers, onion, zucchini, pears, mushrooms into the same bowl, drizzle with olive oil and sprinkle with salt and pepper, then set aside for 10 minutes to allow the flavors to mingle.

Step 2
While the pork, veggies, and garlic are getting acquainted, prepare the peanut sauce: Place all sauce ingredients into a small food processor and buzz until sauce is consistent in texture (if it’s too thick add a little water). Taste and adjust flavors to your preference, then set aside.
Step 3
Time to return to the pork and veggies. Line another baking sheet with parchment. Grab your bamboo skewers and load them up. Skewer the pork and veggies, alternating ingredients until everything has been skewered then line the skewers across the baking sheet in a single layer and pop them into the oven for 20 to 30 minutes, until pork is cooked through (cooking time will vary depending on how large your cubes of pork are).
Step 4
When the yams and skewers are done remove them from the oven and share everything over 4 plates. Give each plate a healthy drizzle of peanut sauce (use it all!) – even the yams! They’re even more awesome with sauce! Then sit down and enjoy this tasty creation!
