Pork & Sundried Tomato Stuffed Zucchini
with Basil Watermelon Salsa
1 lb ground pork
2 medium zucchini
1 onion, finely chopped
½ c Sundried Tomatoes (packed in oil) sliced
1 tsp garlic
½ tsp nutmeg
Salt & Pepper to taste
1 c grated mozzarella cheese
¼ c Feta Cheese, sliced thinly or crumbled
1 tsp butter to sauté
2 c salad greens
2 c watermelon, diced small
10 fresh basil leaves, chiffonade
Drizzle of Balsamic vinegar
Drizzle of Olive Oil
Salt & Pepper to taste
Step by Step Instructions
Trim ends from Zucchini and par-boil on a hard boil for 10 min, until they begin to soften – but don’t cook them through!
While zucchini are par-boiling, add butter to a heavy pan over medium and sauté the onions over medium heat until they are translucent. Add the pork and sauté until it begins to brown then add the sundried tomatoes, salt, pepper, nutmeg, and garlic and continue to sauté until the pork is cooked through then remove from the heat to cool a bit.
Set the oven to 375°and line a baking sheet with parchment paper.
When the zucchini have finished par-cooking use tongs to remove them from boiling water into a bowl of cold water to cool them down. When they are cool enough to handle cut them in half length wise and scoop out the seedy pulp from inside with a spoon and discard the pulp. Set zucchini on a clean kitchen towel cut side down to help them release a little more water.
When you are ready to stuff the zucchini mix the grated mozzarella into the pork then use a spoon to scoop the pork mixture into the hollowed zucchini. Share all of the stuffing between the 4 zucchini halves then top the stuffed zucchini with sliced or crumbled feta and pop them into to the oven for 20 minutes.
While the zucchini are in the oven, prepare the watermelon salsa. Place the cubed watermelon and fresh basil into a bowl. Drizzle with olive oil and a splash of balsamic vinegar then sprinkle with salt and pepper to taste and set aside until the zucchini are done.
Check the zucchini once they have been in the oven for 20 minutes. If the feta is not browned to your liking move the oven rack up to the highest notch and set the oven to broil. Broil the zucchini for a minute or so to finish browning the feta – but keep a very close eye on things as the broiler will burn the cheese very quickly if you are not careful!
Once the zucchini are done move them to a lower rack and turn off the oven. Share the salad greens over 4 plates then serve the watermelon salsa over the greens. Add a stuffed zucchini to each plate then serve and enjoy!
