Roasted Chicken with Cranberry Apple Salad

  • 8 bone in, skin on chicken thighs

  • Drizzle of olive oil

  • Sprinkle of salt and pepper

  • Sprinkle of garlic granules



  • 1 apple, cored and thinly sliced

  • ½ c unsweetened dry cranberries

  • ½ English cucumber, cubed

  • 2 sticks celery, chunky chopped

  • 2 c baby bok choy or baby spinach

  • Drizzle of olive oil

  • Drizzle of strawberry or apple cider vinegar

  • Salt & pepper

Step by Step Instructions

Step 1

Set oven to 350°

Place chicken into a bowl and drizzle with olive oil. Toss to coat well. Place chicken onto a parchment lined baking sheet and sprinkle with salt, pepper, and garlic granules then pop the chicken into the oven for about 30 minutes, until chicken is golden brown and cooked through.

Step 2

While the chicken is in the oven get your salad ready. Prepare all salad ingredients as noted above and place them into a large bowl. Drizzle with oil and vinegar, sprinkle with salt and pepper, then toss well and pop the salad into the fridge until the chicken is done.

Step 3

When the chicken is done serve two thighs to each of 4 plates. Remove the salad from the fridge, toss gently, then share the salad over the 4 plates beside the chicken. Now sit down and enjoy the delicious flavors of this fresh and simple dinner!
