Salmon Burgers & Spinach Salad
- 1 lb ground salmon or 4 small salmon filets
- 1 egg (optional)*
- 1/3 c fresh parsley, finely chopped*
- 1 stick celery, finely chopped*
- 2 sprigs green onion, finely chopped*
- ¼ c feta cheese*
- (* use these ingredients only if you are using ground salmon)
- Salt and Pepper
- 1 tbsp butter
- 4 burger buns
- ½ c mayonnaise
- Juice of ½ a lemon
- Sprinkle of garlic granules
- Sprinkle of fresh cracked pepper
- 1 lemon wedge
- 2 c baby spinach + a bit more for the burgers
- 1/3 c capers
- 1 c cherry tomatoes, halved
- ¼ red onion, cut into slivers

Step by Step Instructions

Step 1
If you are making salmon patties with ground salmon, place the ground salmon into a bowl with the celery, feta, parsley, green onion, and a bit of salt and pepper (and egg if you choose to use it). Mix well and form into four patties and set aside.
If you are using salmon filets, sprinkle them with salt and pepper and set aside.
Step 2
To prepare the sauce for the burgers, place the mayo, lemon juice, and pepper into a small bowl and whisk until smooth and set aside. This will also double as salad dressing!
Divide the spinach over 4 plates (save a little bit to garnish the burger buns), scatter with cherry tomatoes, slivered onion, and a few capers. (Reserve enough of the cherry tomatoes, onions and capers to garnish the burger buns).

Step 3
Heat the oven to warm and place the burger buns into the oven to warm while you cook the salmon. Melt the butter over medium heat and place the patties (or filets) into the pan. Cook for about 4 minutes on one side, then flip and cook for about 4 minutes on the other side. After you have flipped them, squeeze the juice from the lemon wedge over the salmon. (If you are using filets, also sprinkle with a little salt and pepper).

Step 4
When the salmon has finished cooking remove the buns from the oven and slice them in half. Spread a dollop of lemony mayo over each side of the bun, add spinach, salmon, capers, onions, and tomatoes and close the bun. Place burgers alongside of each salad. Top the salads with a drizzle of lemony mayo and enjoy!
