Swimming Chicken with Broccoli and Roasted Yams
- 4 chicken thighs, leg attached, bone in, skin on (or 8 chicken thighs)
- 2 large yams, cut into thin wedges
- 2 large crowns broccoli, cut into medium florets
- 2 healthy drizzles of toasted sesame oil
- Sprinkle of salt, pepper, and garlic granules
- 1 zest from ½ lemon
Lemon Coconut Gravy
- 1 tin (398ml) coconut cream
(or full fat coconut milk)
- 4 tbsp miso paste
- Juice of 1 lemon
- Splash of soy sauce
- ½ tsp orange extract (optional)
- Fresh cracked pepper
- 1 tbsp corn starch
Step by Step Instructions
Set oven to 350
Place yam slices into a large bowl and add a healthy drizzle of toasted sesame oil, salt and pepper to taste, and toss well until yams are evenly coated. Pour the yams onto a parchment lined baking sheet and set aside.
Place chicken into the same bowl that you used for the yams, drizzle with toasted sesame oil, and toss with salt, pepper and lemon zest until chicken is well coated. Place the chicken on a parchment lined baking sheet and put the chicken and yams into the oven for 45 minutes.
While the chicken and yams are hanging out in the oven, prepare your gravy:
Empty coconut cream into a small heavy bottom pot over low heat. Use a whisk to mix until smooth, then add miso and bring up the heat to medium. Continue whisking for a couple of minutes to ensure a smooth consistency, then add the lemon juice, cracked pepper to taste, and just a splash of soy sauce. Whisk until well combined.
Scoop about 6 tbsp of the coconut cream mixture into a small bowl and mix in the corn starch, then pour the mixture back into the pot and bring up the heat to a soft boil, whisking frequently until the gravy begins to thicken.
When the gravy has thickened correct the seasoning (a good time to decide whether you want to add the orange extract or not) as you like, cover and turn the heat to very low to keep warm until the rest of your meal is ready. Keep it on very low heat so that it does not boil.
Put the broccoli on to steam when the chicken and yams are about 10 minutes from being finished. When broccoli is bright green and tender to a fork, drain well and share over 4 plates. Add yams and chicken to each plate, then share all of the gravy over everything on each plate – use it every drop! It’s delicious and every plate should be swimming in gravy.
